You cannot manage what you do not measure. A paper wine list is a black box: you know what was ordered, but not what was looked at without being ordered, what went unnoticed, or which references triggered hesitation. Winevizer makes this data visible, and you can finally decide on your prices, the order of your sections and the promotion of a reference based on data rather than intuition.

The 5 key indicators

1

Views per reference

How many times has each wine been viewed in its detail page, with views from the list not counted. This indicator reveals the ghost wines that are never viewed, to be removed or given more visibility, and the highly viewed wines that deserve editorial promotion or a by-the-glass listing.

2

View-to-sale conversion

Out of 100 guests who view the page of a Châteauneuf-du-Pape at €65, how many end up ordering it? If conversion falls below 5 %, there are two hypotheses. The price is poorly calibrated for your clientele, or the description does not “sell” enough. You can act on both.

3

Margin per reference

Cross views, sales and unit margin to apply the menu engineering matrix to your list. The details of the cross-analysis are just below.

4

References viewed without a purchase

This is the angle that no paper list can reveal: the wines your guests look at but do not order. A reference viewed 300 times for 0 sales almost always signals a pricing problem (the guest checks, sees the price and gives up) or a positioning problem (a description too technical for the end customer, no bottle photo). By addressing these points, you often recover 10 to 20 % of the sales potential of your existing listing, without touching the cellar.

5

Performance by grape variety, region, price range

Aggregate by grape variety (do your guests like Pinot Noir or not so much at your place), by region (does the Languedoc move as much as Bordeaux), by price range (is the €20-30 band saturated or too empty). These views guide your purchases at the next order from the supplier.

The menu engineering matrix applied to your wine list

High conversion Low conversion
High margin Champions
To push. The page is highlighted, the price does not change.
Puzzles
To promote better, or to reprice.
Low margin Workhorses
Healthy volume, but to be rebalanced.
Dogs
To be replaced.

How Winevizer collects this data

Guest side. Each QR code scan opens an anonymous session. Page views, virtual sommelier selections and time spent are recorded without individually identifying the guest, in compliance with the GDPR and without third-party cookies.

Restaurateur side. You enter actual orders at the time of the till entry, or in aggregate at the end of service. The matching of views and sales is automatic.

Concrete examples of decisions guided by analytics

The reference What the numbers say The decision, and what it produced
Saint-Émilion 2018, €80 200 views, 0 sales over the month The guest checks but does not buy. Lowered to €70 for two weeks, 12 sales. The initial price was above the psychological threshold of the clientele.
Loire Chenin, 7th position among the whites 30 views, 5 sales Moved up to 1st position and marked “sommelier’s favourite”, 120 views and 28 sales the following month. The order within the section changes everything for lesser-known wines.
Côtes-du-Rhône, €35 400 views, 60 sales, 15 % conversion Champion. The page is highlighted as a best-seller in the list. No need to touch the price.
Grand Cru, €280 5 views, 0 sales over three months The reference is not in the right customer segment. Either it is removed, or it stays in the cellar as an image reference, without weighing on the active inventory.

What is the difference with a paper wine list

On a paper list

You have the sales, through the till. That is all. You do not know who was interested in what before ordering, or who looked without ordering. All optimization work is done blind, based on assumptions and subjective feedback from the floor staff.

With Winevizer

You see what is viewed, what is viewed without being ordered, and what is never viewed. Decisions on prices, section order and promotion are made on numbers. You stop guessing.

Compared to competing solutions

Proprietary iPad solutions such as COENA or the American tools Uncorkd and BinWise also offer viewing dashboards, with variations. Uncorkd popularized the “what guests view without buying” indicator, Somm-It focuses on BEV cost variances, the cross between cost and sales. Winevizer stays simpler to read: no dashboard with 50 indicators you do not know what to do with, but the five that really guide the decisions of the week.
